About Pellet Smoker Lab — Our Testing Process & Team
About Pellet Smoker Lab
Pellet Smoker Lab is an independent review site dedicated to helping backyard cooks, BBQ enthusiasts, and pitmasters find the right wood pellet grill and smoker. We physically test every pellet smoker we review — we don’t accept payment for rankings, and we never repost manufacturer marketing materials as our own analysis.
Who We Are
Our team has been testing outdoor cooking equipment, pellet smokers, and grilling accessories since 2018. We focus on wood pellet smokers and temperature control technology, giving us deep product insight into auger feed mechanics, PID controllers, and real-world smoke flavor.
- Testing Experience: 6+ years evaluating hardwood pellet grills and digital controllers
- Units Tested: 32+ models across major industry brands (Traeger, Pit Boss, Z Grills, Camp Chef, recteq, Green Mountain Grills, and more)
- Cooking Volume: Over 500 hours of actual low-and-slow briskets, pork shoulders, ribs, and high-heat searing tests
Our Testing Methodology
We believe a pellet grill review is only trustworthy if the tester has actually cooked real food on it across various weather conditions:
Step 1: Cold & Wind Temperature Stability Testing
We measure internal barrel temperature using multi-channel ambient thermocouple probes. We test temperature recovery after lid openings and stability during cold weather (under 40°F) to verify PID logic and double-wall insulation efficiency.
Step 2: Low-and-Slow Smoke Profile & Bark Formation
Every grill smokes identical cuts of USDA Choice brisket flat and pork butt at 225°F using 100% all-natural hardwood pellets. We assess smoke ring depth, bark texture, and clean smoke flavor absorption without bitter creosote buildup.
Step 3: Auger Jam & Long-Cook Stress Run
We conduct continuous 14-hour overnight burns to ensure hopper geometry prevents pellet bridging or tunneling, which is the primary cause of flameouts and “LEr” (Low Error Reading) error codes.
Step 4: High-Heat Searing & Flame Broiler Performance
We test direct flame sear features and cast-iron griddle attachments, measuring maximum surface temperatures for steaks and burgers.
Step 5: Cleanout Ease & Ash Maintenance
We evaluate the time and ease required to empty the pellet hopper clean-out door, vacuum the firepot, and maintain grease drainage channels after fatty cooks.
What We Score
We evaluate each model across six weighted dimensions:
| Category | Weight |
|---|---|
| Temperature Consistency & PID Accuracy | 25% |
| Smoke Flavor Profile & Bark Formation | 20% |
| Hopper Capacity & Auger Feeding Reliability | 20% |
| Build Quality & Weather Resistance | 15% |
| Cleanup & Ash Management | 10% |
| Smart App & Tech Features (Wi-Fi / Meat Probes) | 10% |
